Burrito Bowls
Burrito bowls from Chipotle and Pancheros are pretty dang good.
But since I’m a small town dweller, those burrito bowls don’t sound that good when I’d have to drive 45 minutes to get one.
Good thing they are a piece of cake to make at home.
Best thing is that you really don’t need to follow any kind of recipe just add rice and your favorite burrito bowl ingredients.
Here’s what I put in my recent burrito bowl:
- Cooked brown rice flavored with lime juice, olive oil, dried cilantro and a little sugar and salt
- Black beans
- White and yellow sweet corn
- Fajitas from my grocery store’s fresh meat counter (already seasoned and cut, just have to cook)
- Shredded Mexican blend of cheeses
- Plain greek yogurt
- Guacamole
I actually added a lot more guac than the picture shows. Don’t you just love that huge pile they give you at Chipotle?

Your burrito bowl looks amazing, I think it is the guac.
A Panchero’s is opening here soon and I’ve never been. Is it better than Chipotle? While we try to eat in at home, we also live in a small town so anytime we get a new restaurant, chain or not, I get pretty excited!
I tend to stop at Chipotle more, but I don’t think you can go wrong with either place.
